Why our food lasts as long a jar

All our packs have a shelf-life of 12 months from the time they are prepared by us. The date (found on the rear of each pack) is, however, a 'Best Before'  date and does not necessarily mean the dish cannot be eaten after this date.

Put simply, we prepare each individual dish much the same as you would prepare a casserole yourself. Each ingredient is prepared for the pot (in our case the pouch), they are then sealed uncooked in the pouch and cooked in a large steam pressure cooker. Thats it, no need for funny ingredients, processes, or preservatives.
The steam pressure cooking gently cooks the dish, with results much the same as a long slow casseroling. All the flavours, aromas, and goodness are sealed in, yet all the bugs are killed off - exactly as they are when you cook something in your own kitchen.
As long as the pouch remains sealed then the food stays absolutely fresh until you need it. This achieves a similar effect to the common jar and tin, yet is a far gentler cooking process so the quality of the ingredients is retained, and the nutrients are no more affected than they would be if you made the dish yourself.
This technique also means that we are able to cook in batches - allowing us to use small, artisan, farmers and let you know exactly who has supplied each ingredient. All thats left now is for you to enjoy the food!
